If you want to whip up an impressive brunch at home, they showed us how to make banana French toast muffins and southwest breakfast casserole. Banana French toast muffins

1 loaf French bread (cubed)

3 eggs (whisked)

1/4 cup white sugar

1 cup brown sugar

1 cup milk

2 tsp cinnamon

2 tsp allspice

1 tsp ground nutmeg

¼ cup dried cranberries

1 tbs vanilla extract

2 whole bananas cut in ¼ inch slices

¼ cup bourbon whiskey

Non-stick cooking spray

Directions 

Pre-heat oven to 350 degrees. In large mixing bowl, blend cubed French bread, eggs, milk, white and ¼ cup brown sugar, cranberries, cinnamon, allspice, nutmeg and vanilla extract. Then, spray medium-sized casserole dish or muffin pan with cooking spray. Pour mixture into casserole dish or spoon into muffin pan and bake for 15 minutes. Foster sauce: melt butter, add ½ cup brown sugar, sliced bananas, and bourbon. Let bananas reduce, pour over French toast and serve!

Southwest Breakfast Casserole

Ingredients

6 cups shredded hash-browns

12 eggs & ¼ cup milk whisked

3 cups fresh spinach

1 whole red pepper diced

2 cups ham pieces

3 cups shredded cheddar cheese

2 tbs ancho-chili seasoning

Salt & pepper to taste

3 tbs non-stick cooking spray

Directions

Pre-heat oven to 350 degrees. In large mixing bowl, blend hash browns, whisked eggs, fresh spinach, red pepper, ham pieces, I cup of cheddar cheese and seasonings well. Then spray medium sized casserole dish with non-stick cooking spray completely. Pour mixture into casserole dish, and bake for 20-25 minutes or until eggs cooked through. Remove from oven and top dish with remaining shredded cheese. Let melt and serve!
